French Dip Smash Burgers
I can no longer have a plain smash burger thanks to this recipe. This french onion dip pairs so well with the smash burger and loads of melty cheese. Recipe inspired by the queen of burgers @alexkitchenbangers

What is a French Dip Smash Burger?
A French Dip Smash Burger is a twist on a classic smash burger, loaded with caramelised French onion-style beef, melty cheese, and served with a rich dipping sauce (au jus) on the side. It’s the perfect comfort food dinner.
How do you make smash burgers at home?
To make smash burgers, roll your mince into loose balls, then press them flat onto a hot pan or grill until crispy around the edges. They cook quickly and have loads of flavour thanks to the browned crust.
What kind of onions are used for French dip burgers?
Caramelised onions are key for French Dip-style burgers. Cook them low and slow until soft, sweet, and golden—they add loads of rich flavour to the burger.
What’s the best meat for smash burgers?
Use good-quality beef mince with around 15–20% fat. The fat helps create that crispy outer crust and keeps the burger juicy inside.
Is this a good dinner recipe?
Yes, French Dip Smash Burgers make a brilliant weekend dinner or fakeaway treat. They’re packed with flavour and great for sharing. Serve with fries or a side salad to make it a full meal.
Method
Step 1
Heat a little butter in a pan over medium-high heat.
Step 2
Add the chopped onion and cook for about 10 minutes until browned.
Step 3
Stir in the garlic purée, dried thyme, Worcestershire sauce, and beef stock. Mix well and simmer until the sauce thickens. If it’s still too runny, stir in some gravy granules to thicken.
Step 4
Meanwhile, make the burger patties. In a bowl, combine the beef mince with garlic granules, onion granules, salt, and pepper. Mix well, then form into four balls.
Step 5
Add one mince ball to the hot pan. Place a sheet of greaseproof paper on top and firmly press down to smash it into a patty.
Step 6
Cook for 3–4 minutes, flip, add a slice of cheese, and cook for another 3–4 minutes until the cheese melts. Repeat for the remaining patties.
Step 7
To assemble, spread mayo on the base of a brioche bun. Stack two cheesy beef patties on top, then spoon over the French onion sauce. Top with the other half of the bun and serve.
