Mash is the perfect pairing! Creamy mashed potatoes soak up the garlic and parmesan sauce beautifully, making it a comforting and filling one pan pork dinner.
How do I know when the pork is cooked?
Your pork chops should be golden on the outside and cooked through in the middle. They should feel firm to the touch, with no pink remaining in the centre.
Can I make this ahead of time?
This dish is best served fresh, but you can make it ahead and reheat gently in the pan. Add a splash of water or stock to loosen the sauce if needed.
Can I add vegetables to make it a full one pan meal?
Yes! Spinach, mushrooms, or green beans can be added to the pan while the sauce is simmering to turn this into a complete one pan midweek meal.
Can I use grated parmesan?
Freshly grated parmesan is recommended for the best flavour and a smooth sauce, but pre-grated will still work if that’s what you have on hand.
Method
Step 1
Add a drizzle of olive oil to a pan and fry your pork chops on each side, rendering the fat until crisp, then remove from the pan.
Step 2
In the same pan, add your chopped onion and garlic and cook until softened. Pour in the chicken stock, Worcestershire sauce and Dijon mustard and stir well. Add the crème fraîche and parmesan and allow everything to gently bubble.
Step 3
Place the pork chops back into the sauce and simmer for 15 minutes (with the lid on) until fully cooked through.
Step 4
If serving with mash, you can make your own put when I’m lazy and can’t be bothered, I’ll use Mash Direct. Simply pierce the film with a fork and pop in the microwave for 4½ minutes.
Step 5
Serve the pork chops with the creamy mash, peas if you fancy, and spoon over that garlic & parmesan sauce. Enjoy!
