Method

Step 1

Add all the salad ingredients except the peanuts to a large bowl. Toss well together.  

Step 2

Mix together the dressing ingredients and stir through the salad. Allow it to sit and soften for 5–10 minutes then top with the chopped peanuts and serve.

2 large cooked chicken breasts, shredded or chopped  

¼–1/2 red cabbage, finely chopped  

4 carrots, shredded 

a large handful of kale, finely chopped  

1/2 cucumber, roughly chopped  

2 spring onions, finely sliced  

a small handful of fresh mint and coriander, finely chopped  

50g peanuts, chopped  

Dressing:  

1 tbsp sesame oil  

juice of 1 lime

1 tsp ginger puréee 

2 tbsp soy sauce  

1 tsp runny honey
