This is one of my favourite quick dinners when I need something packed with flavour but don't want loads of washing up. Ready in under 20 minutes!

Dan Dan noodles are a popular Sichuan Chinese noodle dish traditionally served with a spicy, savoury sauce made from chilli oil, sesame paste, soy sauce and minced pork. This chicken mince Dan Dan noodles recipe is a lighter, budget-friendly version using chicken mince instead of pork, making it perfect for a quick midweek dinner.

 

 

Can I use chicken mince instead of pork in Dan Dan noodles?

Yes. This recipe is ready in around 20–25 minutes, making it perfect for busy weeknights. While the noodles cook, you can prepare the chicken mince and sauce, so everything comes together quickly with minimal washing up.

Method

Step 1

Heat the oil in a large frying pan or wok over a medium-high heat. Add the chicken mince, season with black pepper and cook for 5-8 minutes, breaking it up with a spatula, until browned and slightly crispy.

Step 2

Meanwhile, whisk together all of the Dan Dan sauce ingredients in a bowl until smooth. 

Step 3

Cook the noodles according to the packet instructions. Pour the sauce into the pan with the chicken, then add the pak choi and spring onions. Simmer for 2–3 minutes until the sauce thickens slightly and the pak choi has softened.

Step 4

Stir through the cooked noodles until everything is coated in the sauce. Divide between bowls, top with extra spring onions and chilli flakes if you like, then serve. Enjoy 🙂 

Ingredients

For the chicken mince:

500g 5% chicken mince

1 tbsp sesame oil (or olive oil)

Cracked black pepper

1 tbsp honey (optional)

For the Dan Dan sauce:

1 tsp sesame oil

1 tbsp dark soy sauce

2 tbsp peanut butter

1 tbsp honey

1 tbsp rice vinegar

½ tsp Chinese five spice

3 garlic cloves, minced

150ml chicken stock

To serve:

250g dried egg noodles, cooked

2 pak choi, chopped

3–4 spring onions, sliced

Chilli flakes (optional, if you like spice)
