Method

Step 1

To a blender, add your oats, cottage cheese, eggs, baking powder, milk and vanilla extract. Give that a good blend. 

Step 2

Heat a large pan over medium-high heat. Pour the pancake batter into the pan, forming three small pancakes. Add your blueberries to each pancake and cook for 2-3 minutes on each side. Cook for 2-3 minutes each side. This mixture should make 5 pancakes.  

Step 3

Serve your pancakes with some Greek yoghurt, more blueberries and a drizzle of honey.
