Overripe bananas are actually the best bananas to use for banana bread. As bananas ripen, the natural sugars increase, which gives the loaf a sweeter flavour, softer texture and richer banana taste. The more brown spots your bananas have, the better.

Method

Step 1

Preheat your air fryer to 160°C (or your oven to 180°C). 

Step 2

Blend the oats into a fine flour and set aside. Melt the butter in the microwave. In a large bowl, mash the bananas, then add the melted butter, blended oats and the remaining banana bread ingredients. Mix well.

Step 3

Pour the mixture into a greased loaf tin. Cook in the air fryer for 30–35 minutes or the oven for 40–45 minutes, until golden. Check it’s cooked by inserting a skewer into the centre – if it comes out clean, it’s ready. If not, cook for another 2–5 minutes and test again.

Step 4

Leave the banana bread to cool in the tin for 5 minutes before transferring it to a wire rack to cool completely.

Step 5

Slice and serve. I love mine with Greek yogurt and homemade fruit compote. To make the compote, add the frozen berries to a saucepan with a squeeze of lemon juice. Cook over a medium heat for around 10 minutes, stirring occasionally, until the fruit has broken down into a thick compote.

Ingredients

3 large black bananas

150g half fat butter, melted

2 eggs

4 tbsp honey

100g oats, blended

100g self-raising flour

100g dark chocolate chips

Handful of walnuts, crushed

1 tsp sweet cinnamon

2 tsp baking powder

Pinch of salt

For the fruit compote:

500g frozen mixed berries

Juice of 1 lemon 

To serve:

2 tbsp Greek yogurt per serving
