With minimal effort, you can whip up this easy recipe in your slow cooker, allowing you to enjoy a hassle-free Christmas dessert that will impress all of your guests.
Can you cook bread and butter pudding in the slow cooker?
Yes, you can definitely cook bread and butter pudding in the slow cooker. It’s a great way to make this classic dessert without using the oven. The slow cooker keeps the pudding moist and allows the flavours to develop beautifully.
Can you cook with alcohol in a slow cooker?
Absolutely! You can cook with alcohol in a slow cooker. The low, steady heat of the slow cooker allows the alcohol to infuse the dish without evaporating too quickly. However, keep in mind that not all the alcohol will cook off, so this dessert is best for adults.
What can you use instead of Baileys?
If you don’t have Baileys or prefer a non-alcoholic version, you can use alternatives such as:
- Chocolate milk
- Coffee or espresso (for a tiramisu-like flavour)
- Swap Baileys for another liqueur like Amaretto or Kahlua
How can I customise this recipe?
There are many ways to customise this pudding:
- Add chocolate chips or dried fruit like raisins or cranberries
- Use different types of bread (brioche, panettone, or challah work well)
- Swap chocolate chips for Terry’s Chocolate Orange chunks and replace the Bailey’s with more milk or cream
- Top with nuts for extra crunch
Is this a good Christmas dessert?
This Slow Cooker Baileys Bread and Butter Pudding is an excellent Christmas dessert. It’s warm, comforting, and has a festive twist with the addition of Baileys. Plus, using the slow cooker frees up your oven for other holiday cooking, making it a practical choice for busy Christmas meals.
Method
Step 1
Prepare your custard by mixing your eggs, double cream, milk, baileys, caster sugar and light brown sugar.
Step 2
Cut your brioche loaf into 1-2cm thick slices (a whole loaf should get you about 12 slices) so you have 6 slices for the bottom and 6 for the top.
Step 3
Grease your slow cooker with some unsalted butter then assemble. Take the first half of the loaf and place at the bottom, then add some chocolate chips. Add the rest of your bread on top then place your custard mixture all over the bread. Top with more chocolate chips and dust with some light brown sugar.
Step 4
Cook on high for 2 1/2 hours or low for 5 hours. For a nice crispy finish, you can transfer the slow cooker pot to the grill to let the brown sugar caramelise on top for around 5 minutes. Once done, serve with some icing sugar, fresh mint and ice cream.
