Alfredo with Air Fryer Cubed Potatoes

If you love Alfredo sauce and you’re a fan of potatoes (who isn’t?), you’ve got to try this. It’s all the creamy, cheesy goodness you’d expect from Alfredo – but with soft, fluffy cubed potatoes instead of pasta. Perfect for a cosy night in or when you just want something a bit different but still really satisfying.

What is Alfredo?

Alfredo is a creamy white sauce made with butter, double cream, and grated cheese—usually Parmesan. It’s rich, smooth, and cheesy, and is most commonly served with pasta, but it also works really well with potatoes, chicken, or vegetables.

 

What are the best potatoes to use for this recipe?

Waxy potatoes like Maris Piper or Charlotte potatoes work well because they hold their shape and crisp up nicely in the air fryer.

 

Can I make this recipe without an air fryer?

Yes, if you don’t have an air fryer, you can roast the cubed potatoes in the oven at 200°C (180°C fan) for around 25–30 minutes, turning halfway through.

 

Can I make Alfredo sauce healthier?

You can lighten it up by using reduced-fat cream or a mix of milk and Greek yoghurt. Parmesan adds flavour, so you don’t need loads.

 

How do I store and reheat leftovers?

Keep leftovers in an airtight container in the fridge for up to 2 days. Reheat in the microwave or air fryer, adding a splash of milk to loosen the sauce if needed.

Method

Step 1

Peel, quarter, and dice your potatoes into small cubes. Toss them in a drizzle of oil, then season with salt, pepper, and Cajun spice. Pop them into the air fryer basket and cook at 200°C for 20 minutes, shaking halfway through. 

 

Step 2

Meanwhile, lightly spray a pan with low-calorie cooking spray and add your chicken. Season with salt, pepper, Italian herbs, and onion granules.  

Step 3

Once the chicken is cooked through, stir in the garlic purée, Philadelphia, chicken stock, and grated Parmesan. Mix well until the sauce thickens. If it needs a little help, stir in a touch of cornflour to reach your desired consistency. 

Step 4

Serve up your creamy chicken with the crispy air-fried potatoes and some tenderstem broccoli for a tasty, balanced meal.

For the chicken: 

300g chicken breast 

1 tsp garlic granules 

1 tsp Italian herbs  

1 tsp onion granules 

Salt & pepper 

For the sauce: 

100ml chicken stock 

100g @philadelphia_uki light 

1 tsp lazy garlic 

1 tsp oregano 

40g parmesan 

For the potatoes:  

400g potatoes  

1 tbsp Cajun 

Salt and pepper 

Drizzle of olive oil  

Tenderstem broccoli, to serve
