Air Fryer Vegetarian Tacos

I absolutely love tacos and this recipe is still delicious without any meat. Personally, I prefer my guacamole smooth, which creates a lovely contrast with the hearty texture of the beans. It’s a simple, flavourful dish that hits the spot every time.

Can you make vegetarian tacos in the air fryer?

Air fryers are perfect for making crispy, flavour-packed vegetarian tacos. You can heat your tortillas, roast vegetables or beans, and even make crunchy taco shells in the air fryer for a quick and healthy fakeaway at home.

How do you keep vegetarian tacos crispy in the air fryer?

To keep your tacos crispy, lightly spray the tortillas with a little oil and cook them in the air fryer at 180°C for 3–4 minutes after filling. Avoid overfilling as this can make the tacos soggy.

Can I use canned black beans for air fryer vegetarian tacos?

Absolutely. Canned black beans are a great time-saver and work perfectly in this recipe. Just drain and rinse before seasoning and air frying.

What toppings go well with vegetarian tacos?

Some popular toppings include:

  • Guacamole (smooth or chunky)
  • Salsa or chopped cherry tomatoes
  • Sour cream (or a lighter alternative)
  • Fresh coriander and lime wedges
  • A sprinkle of reduced-fat cheese

Are vegetarian tacos a healthy fakeaway option?

Using beans instead of meat keeps these tacos high in fibre and plant-based protein, while an air fryer uses minimal oil compared to frying. It’s a lighter and healthier fakeaway you can enjoy any night of the week.

How long does it take to make vegetarian tacos in the air fryer?

From start to finish, you can make these tacos in under 20 minutes, including prepping your bean filling and air frying the tortillas.

Can I make these tacos gluten-free?

Yes – simply swap regular flour or corn tortillas for gluten-free tortillas, and check that your taco seasoning is gluten-free.

This is a recipe I wrote for Healthy Fakeaways, but it didn’t make the cut. If you want to pre order, you can here! But not to worry – I have more fakeaway recipes like this over on my website:

Method

Step 1

Preheat your air fryer to 180°C for 5 minutes.  In a heatproof dish that fits in your air fryer, add the oil and minced garlic. Air fry for 3-4 minutes, then add the beans, honey, spices and give it a good stir. Air fry for another 5-6 minutes, stirring halfway. Lightly mash the beans with the back of a spoon and set aside.

Step 2

Prepare your guacamole by mashing the ingredients above together. Mash until you get your desired consistency, depending if you like chunky or smooth.

Step 3

To serve, spoon 1-2 tbsp of the bean mixture onto each tortilla. Top with a generous dollop of guacamole, a drizzle of hot sauce and some sour cream. Enjoy!
