I absolutely love tacos and this recipe is still delicious without any meat. Personally, I prefer my guacamole smooth, which creates a lovely contrast with the hearty texture of the beans. It’s a simple, flavourful dish that hits the spot every time.

To keep your tacos crispy, lightly spray the tortillas with a little oil and cook them in the air fryer at 180°C for 3–4 minutes after filling. Avoid overfilling as this can make the tacos soggy.

Method
Step 1
Preheat your air fryer to 180°C for 5 minutes. In a heatproof dish that fits in your air fryer, add the oil and minced garlic. Air fry for 3-4 minutes, then add the beans, honey, spices and give it a good stir. Air fry for another 5-6 minutes, stirring halfway. Lightly mash the beans with the back of a spoon and set aside.Â
Step 2
Prepare your guacamole by mashing the ingredients above together. Mash until you get your desired consistency, depending if you like chunky or smooth.Â
Step 3
To serve, spoon 1-2 tbsp of the bean mixture onto each tortilla. Top with a generous dollop of guacamole, a drizzle of hot sauce and some sour cream. Enjoy!Â
