Step 1

To prepare the chicken, begin by trimming any excess fat from the chicken breasts, then pat them dry with paper towels before evenly coating each breast with the fajita seasoning mixture in a shallow dish.

Step 2

Coat the seasoned chicken breasts by dipping them into a light egg wash created by cracking and lightly beating eggs in another shallow dish. Then, transfer each chicken breast to a plate with crushed cornflakes, pressing gently to ensure the cornflakes adhere evenly to the surface of the chicken.

Step 3

Air fry the coated chicken breasts at 190°C (375 ºF) for approximately 14 minutes. If needed, flip the chicken halfway through cooking. Alternatively, you can cook them for 7 minutes on each side for optimal results.

Step 4

Prepare the hot honey sauce while the chicken is cooking by mixing your favourite hot sauce with honey to your desired taste. Once the chicken is cooked and golden brown, carefully remove it from the air fryer basket, then generously brush each chicken breast with the prepared hot honey sauce using a pastry brush or spoon, ensuring they’re fully coated.

Step 5

Assemble the sandwiches by spreading a layer of creamy mayo on your preferred type of bread, then place your hot honey-coated chicken breast on top.
