Method
Step 1
Add the potatoes to a bowl with olive oil, pesto and parmesan. Mix well and air fry at 200°C for 10–12 minutes.
Step 2
Meanwhile, coat the chicken in olive oil, Italian seasoning, garlic granules, salt and pepper.
Step 3
Add the chicken on top of the potatoes and air fry at 180°C for 17 minutes until cooked through.
Step 4
While everything cooks, make the bruschetta topping by mixing together the tomatoes, basil, olive oil, balsamic, garlic, parmesan, salt and pepper.
Step 5
Serve the chicken and crispy potatoes topped with the bruschetta mix and a drizzle of balsamic glaze. So fresh, simple and packed with flavour.

1kg baby potatoes, halved
1 tbsp olive oil
2–3 tbsp green pesto
1–2 tbsp parmesan

Cherry tomatoes, chopped
Fresh basil
1 tbsp olive oil
2 tbsp balsamic
3 garlic cloves, grated
1–2 tbsp parmesan
Salt & pepper
Balsamic glaze, to serve
