Does the cooking time vary between regular and sweet potatoes?

 

Yes, regular potatoes take about 35-45 minutes at 200°C (395°F), depending on size. Sweet potatoes cook faster, usually in 30-40 minutes at the same temperature, as they contain more sugar and moisture.

 

 

Should I poke holes in the potatoes before air frying?

 

Yes, poking holes with a fork helps steam escape, preventing potential bursting.

 

 

Do I need to coat them with oil?

 

It’s optional but recommended. A light coat of olive oil or avocado oil helps crisp up the skin. Sweet potatoes naturally have thinner skin and don’t crisp up as much as regular baked potatoes.

 

 

Should I wrap them in foil?

 

No, wrapping in foil traps moisture, leading to softer skin. If you want crispy skin, air fry them unwrapped.

 

 

What are the best toppings for air-fried baked potatoes?

 

Personally, you can’t beat baked potatoes with beans and cheese in my opinion. But this mince recipe I made with these sweet potatoes was so good. High in protein too.

Method

Step 1

Wash your sweet potatoes, dry then pierce using a fork. Add some oil and salt then pop them in the airfryer for 30-32 minutes at 200°C (395°F). 

Step 2

While the potatoes are cooking, prepare your mince by adding the mince to a pan on medium heat, add your diced red onion with all the seasonings above. Leave that to simmer.  

Step 3

When the potatoes are ready, slice down the middle with a knife and fluff the potato using a fork. Add 2-3 tbsp of the mince mixture and top with some grated mozzarella. Pop the potatoes back in the airfryer for 8 minutes at 180°C (355°F)… or until the cheese is melted. 

Ingredients

4-6 sweet potatoes (the mince would easily fill 6 potatoes)

Salt and pepper

Olive oil

For the mince:

500g beef mince (I used 5% less fat)

1/2 red onion

2-3 tbsp tomato puree

1 tbsp garlic puree

1 tbsp chilli puree

2 tsp cajun/paprika

2 tsp oregano

salt and pepper
