Can I cook pork belly in the air fryer?


Yes, absolutely. Pork belly works brilliantly in the air fryer. It gets crispy on the outside while staying tender inside. The fat renders down nicely, making it ideal for dishes like Korean pork belly bites. It’s also a great way to cut down on oil compared to deep-frying, making this a lighter fakeaway option.

 

How long does pork belly take in the air fryer?


Depending on the size of your pork belly pieces, it usually takes around 20–25 minutes at 190°C in the air fryer. Shake the basket or turn the bites halfway through for even crisping. Keep an eye on them towards the end so they don’t overcook.

 

Should I marinate the pork belly before air frying?


Yes! For the best flavour, marinate the pork belly in a Korean-style marinade made with soy sauce, garlic, ginger, sesame oil, gochujang (Korean chilli paste), and a bit of honey or brown sugar. Marinating for at least 30 minutes (or overnight if you’ve time) gives these Korean pork belly bites that rich, sticky, spicy-sweet flavour that makes them taste just like your favourite fakeaway.

 

Is this a healthy recipe?


Using the air fryer instead of deep-frying makes this a healthier option. While pork belly is naturally higher in fat, you can trim excess fat and use leaner slices if preferred. Pair with steamed rice, crunchy Asian slaw or lettuce wraps for a more balanced fakeaway-style meal.

 

What can I serve with Korean pork belly bites?


These air fryer pork belly bites go well with:

  • Steamed jasmine or sticky rice

  • Kimchi or pickled veggies

  • Asian-style slaw

  • Lettuce wraps (great for making low-carb bites)

  • A drizzle of extra gochujang mayo or sesame dressing for dipping

 

 

 

Can I reheat leftovers in the air fryer?


Yes – just pop the leftover pork belly back in the air fryer at 180°C for 5–6 minutes to reheat and crisp back up. It’s perfect for lunch the next day or stuffing into a bao bun for a quick fakeaway-style snack.

 

I can’t find gochujang – what can I use instead?


If you can’t get hold of gochujang, you can swap it for a mix of sriracha and a touch of miso paste or soy sauce to get that spicy umami flavour. It won’t be quite the same, but it’s a decent substitute for homemade Korean pork belly bites.

 

Can I make this recipe gluten-free?


Yes, simply use tamari or a gluten-free soy sauce, and double-check your gochujang brand for any hidden gluten. Serve with gluten-free sides and you’re good to go!

 

Can I make this with another cut of pork?


You can! While pork belly gives that melt-in-the-mouth result, you could use pork shoulder or even pork loin for a leaner version. Just reduce the cooking time slightly to avoid it drying out.

Method

Step 1

Slice the pork belly into small, bite-sized chunks. Add to a bowl with the garlic and onion granules, then mix well. 

Step 2

Pop the pork belly pieces into the air fryer and cook at 190°C for 20 minutes. 

Step 3

While the pork cooks, make your Korean sauce by mixing all the sauce ingredients in a small bowl. 

Step 4

Once the pork is cooked, transfer it to a hot pan, pour over the sauce, and cook for a few minutes until everything is nice and sticky.  

Step 5

Finish with a sprinkle of sesame seeds and chopped spring onion, then serve over a bed of rice and dig in. 

Ingredients

4 thick cut pork belly slices

1 tsp garlic granules 

1 tsp onion granules 

Korean sauce: 

3 tsp Gochujang paste 

2 tbsp dark soy sauce 

2 tbsp honey 

1 tsp rice wine vinegar 

1 tsp garlic paste 

1 tsp sriracha  

To garnish:  

1 tsp sesame seeds 

1 spring onion, chopped
