Lamb leg or shoulder works well for air fryer skewers. Trim excess fat and cut into 1.5-2cm cubes for best results.

Method

Step 1

Cut your lamb shoulder into small pieces and pop into a bowl with olive oil, soy sauce, rosemary, thyme, cumin, chilli flakes, salt and pepper.

 

Step 2

Add the lamb pieces to metal or wooden skewers (if using wooden skewers make sure to soak them in water for a few hours so they don’t burn)

Step 3

Pop the skewers into the air fryer for 10-12 minutes at 200.

Step 4

Once cooked, serve on some rotis or flatbreads with some Greek yoghurt, chilli oil, coriander, lemon juice and some spring onions.

400g lamb shoulder, diced 

1 tbsp olive oil  

1 tsp dark soy sauce 

1/2 tsp Rosemary  

1 tsp Thyme  

2 1/2 tsp Cumin 

1/2 tsp chilli flakes 

Salt and pepper 

To serve: 

2-3 Rotis 

100g Greek yoghurt 

Fresh red chilli, finely diced 

Handful of coriander, chopped 

2-3 spring onions, finely sliced 

Juice of 1/2 lemon   

1-2tbsp Chilli crunch oil
