Crunchy Air Fryer Crispy Bang Bang Chicken Pitta Pockets. Now traditionally the chicken is “banged” but we won’t be doing that, we’re going crispy in a cornflake crumb. This serves 4 people as a light meal, you could have a salad on the side, or for 2 people its 2 large pittas. You’ll also have lots of sauce so keep some in your fridge for your next sandwich or pitta. Method
Step 1
Mix together your bang bang sauce using light mayo, soy sauce, sriracha, peanut butter, honey, garlic purée and sweet chilli sauce.
Step 2
Coat the chicken pieces in the egg then in the fine cornflake crumb.
Step 3
Spray with low calorie oil and air fry for 12 mins at 200.
Step 4
Toss the airfried chicken into the bang bang sauce.
Step 5
Toast pittas, cut in half and fill the life out of them with lettuce, chicken, more sauce, chilli… and get stuck in!

2 x chicken breasts
1 x beaten egg
100g crushed cornflakes
4 tbsp light mayo (for sauce)
1 tbsp soy sauce (for sauce)
2 tbsp sriracha (for sauce)
1 tbsp peanut butter (for sauce)
1 tbsp honey (for sauce)
1 tbsp garlic purée or 3 grated cloves (for sauce)
2 tbsp sweet chilli sauce (for sauce)
Pitta breads
Lettuce
Chilli (if you like heat!)
Spring onions (optional)
